Fall Dessert—Pumpkin Bars with Cream Cheese Frosting

These are the ultimate fall dessert and will be a favorite at your next potluck, dinner party, or whatever fall gathering you are attending.  I made these extra moist, and they have just a hint of cinnamon so the pumpkin is the star of the show (more vitamin A for everyone)!  These will be gone in a flash so you might need a double batch.


Fall Dessert--- Pumpkin Bars with Cream Cheese Frosting

Ingredients
  • For the Bars:
  • 2 cups flour
  • 2 cups canned pumpkin
  • 4 eggs
  • 1 cup canola oil
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • For the Cream Cheese Frosting:
  • 8 ounce package cream cheese
  • 6 Tbls. butter, softened
  • 2¼ cups powedered sugar
  • 1 tsp. vanilla extract
Instructions
  1. Preheat oven to 350 degrees. Combine all ingredients for bars. Pour into 9x 13 pan. Bake for 35-38 minutes until a toothpick comes out clean. Let pumpkin bars cool. To make frosting, combine cream cheese and butter. Beat for 3-5 minutes. Add the vanilla and powdered sugar. Mix until frosting is thoroughly combined. Frost bars and chill for 30 minutes. Serve.
