These Greek inspired turkey burgers are loaded with classic Mediterranean flavors of parsley, garlic, red bell pepper and oregano then topped with cucumbers, red onion and a tangy creamy feta sauce. They are light and juicy and make for a deliciously healthy lunch or dinner.
Weeknight Dinner----Greek Turkey Burgers with Feta Sauce

Ingredients
- For the burgers:
- 1 pound ground turkey
- ⅔ cup, panko breadcrumbs
- ⅓ cup, chopped bottled roasted red peppers
- ¼ cup chopped fresh parsley
- 1 tsp. dried oregano
- 1 tsp. salt
- ½ tsp. ground pepper
- 1 large egg, beaten
- 2 garlic cloves, minced
- 1 cucumber, sliced into rounds
- 1 red onion, sliced thin
- favorite sandwich buns
- For the feta sauce:
- ½ cup crumbled feta cheese
- ½ cup plain greek yogurt
- ½ lemon, juiced
- 1 garlic clove, minced
- salt and pepper to taste
Instructions
- Prepare yogurt sauce by combining feta, yogurt, lemon juice, garlic, and salt and pepper in a food processor or blender. Mix thoroughly and pour into a small serving bowl. Place in refrigerator until ready to use.
- Next, combine all ingredients for burgers into medium mixing bowl. Form 4 large patties or 6 smaller-sized. Add 2 Tbls. olive oil to large skillet over medium-high heat and cook 6 minutes per side until burgers are cooked through.
- Spread yogurt sauce on bottom of toasted bun, followed by sliced red onion, turkey burger patty, and cucumber.
