Leftover Ham Part 2—Tortellini With Peas and Ham

I’m not kidding–this dish came together in less than 15 minutes once the water started boiling.  I felt so satisfied using all my leftovers and the results were so delicious we just ate out of the bowl for dinner (desperate times and all that). If your don’t have tortellini use any noodle in your pantry.

This meal is comfort food at its best and Lord knows we all need a little comfort right now.

Leftover Ham Part 2—Tortellini With Peas and Ham

Ingredients

1 Tbls. extra-virgin olive oil
1 shallot, minced ( or 1/4 cup onion, minced)
3 cloves garlic, minced
1 cup ham, chopped
1 package of cheese tortellini
1 cup frozen peas
1 cup heavy cream
1 cup freshly grated Parmesan, plus more for serving
Freshly chopped parsley, for garnish

Instructions

Add oil to a large skillet over medium-high heat.

Add ham, shallot and garlic and cook stirring occasionally, 5 minutes. Season with salt and pepper. Add cream and simmer until thickened, 3-5 minutes more.

Add tortellini and frozen peas and stir until coated.  Add Parmesan and stir until creamy.

Garnish with parsley and serve.

    Hi Tonja! I had no tortellini so I used macaroni. Also did not have frozen peas so I used fresh spinach and wilted it in the mix. Yummy!!! Great way to use that leftover ham!
