The Holidays are upon us—and if you’re hosting overnight guests, there’s more than just dinner to consider. I LOVE this Canadian Bacon Quiche for breakfast or lunch. It’s full of sautéed shallots, savory canadian bacon, and not one, but two delicious cheeses. I’ve finally found the right combination of all these ingredients after numerous tries at quiche making. I bought my pie crust at Trader Joes (my favorite store bought) and made this ahead. Your guests can reheat for a simple yet satisfying meal.

Company Coming?—Make-Ahead Canadian Bacon, Cheddar & Gruyere Quiche
Ingredients
1 (9-inch) frozen ready-to-bake pie crust
1 tablespoon butter
1 shallot, minced
4 large eggs
1 cup half-and-half
1 tsp. everything bagel seasoning
1 tsp. salt
1/2 tsp. pepper
1 6-oz. package canadian bacon, diced
1 cup gruyere cheese, freshly grated
1 cup cheddar cheese, freshly grated
garnish: chopped chives
Instructions
Preheat oven to 375 degrees F. Place thawed pie crust in pie pan and place on baking sheet. Bake for 10 minutes. Remove and allow to slightly cool.
Add the butter to a nonstick pan and melt over medium high heat. Add in the minced shallot and canadian bacon and cook, 3-5 minutes.
In a large bowl, whisk the eggs until lightly beaten. Then whisk in the half-and-half, everything bagel seasoning, and salt and pepper.
Gently stir in the canadian bacon mixture and both cheeses.
Pour filling into the par-baked pie crust and bake 35 to 45 minutes, or until just set. Remove from oven and let cool slightly. Sprinkle with chives and serve.
