Overnight Oats with Bananas, Peanut Butter, and Coconut

This might be the easiest most versatile recipe I have ever given you.  Overnight oats, plus 4 ingredients and a grab-it-out-of-the-fridge situation meets all your “I’m in a hurry” needs.  You can literally put whatever fruit or nuts you want to on top.  Just keep the oats to milk ratio the same.  Don’t drink milk?  Switch it up to almond or soy.  You pick.  It’s downright delicious and too easy for words.  Your kids will thank you.

Plus who doesn’t want an excuse to buy these cute little half-pint mason jars?

Overnight Oats with Bananas, Peanut Butter, and Coconut

Ingredients

Scale
  • 1 1/3 cups Quaker Old Fashioned Oats, divided
  • 4 Tbls. peanut butter
  • 4 Tbls. chocolate chips
  • 4 Tbls. shredded coconut
  • 2 cups 2% milk
  • 1 banana, thinly sliced (or favorite fruit)

Instructions

  1. Pour 1/3 cup Quaker Old Fashioned Oats into 4 half-pint mason jars. Top with a Tbls. each of peanut butter, chocolate chips and coconut shavings. Pour about a cup of milk into each jar, covering the oats mix. Close the lid on each jar and chill in the fridge overnight.
  2. The next morning, remove the lids and give each jar a slight stir. Top with sliced banana and a dusting of cinnamon!
