Who says you can’t eat burgers in a bikini? Liven up your next beach party or backyard BBQ with these lean and luscious turkey burgers. They are a great alternative to ground chuck when you want to lighten things up but still crave the flavor of a juicy burger. I’ve added some minced red onion, Worcestershire, seasonings, and herbs to kick-up the flavor. The spicy pickle sauce seals the deal and is a must at your next summer soiree.
Turkey Burgers with Smoked Gouda and Spicy Pickle Sauce

- For the Turkey Burgers:
- 16 oz ground turkey
- 1/4 cup minced red onion
- 1 egg, whisked
- 1/4 cup bread crumbs
- 1 tsp. dry mustard
- 1 tsp. garlic powder
- 1 tsp. paprika
- kosher salt and fresh ground pepper
- 1 Tbls. parsley, minced
- 1 Tbls. Worcestershire sauce
- For the Pickle Sauce:
- 1/2 cup mayo
- 1/2 cup chopped dill pickles
- 1 Tbls. pickle juice
- 1/2 tsp. tabasco sauce
- 2 Tbls. pepperocinis, minced
- For Serving:
- 4 brioche or potato rolls
- 4 slices of smoked gouda cheese
- lettuce
- tomato slices
Instructions
- Preheat grill to medium high.
- In a large bowl, combine all of the turkey burger ingredients. Divide mixture and form 4 burger patties.
- Brush patties with olive oil and grill, turning once until cooked through, about 12 minutes.
- While burgers are grilling, add mayo, dill pickles and pepperoncinis to a small bowl. Combine well, season with salt and pepper and set aside until ready to use.
- To finish burgers, add slices of gouda cheese and melt, about one minute. Grill buns for one minute more face down on the grill. To serve, spread pickle sauce on buns followed by lettuce, tomato, and burger.
- Serve immediately.
