I love this combo of ingredients and especially love cooking with coconut oil as there are many health benefits. I’ve also included a great article how to determine if your oil is bad or not here. These might be the easiest bars I’ve made to-date and SO tasty. Treat yourself to a batch this week!
Summer Snack---Oatmeal and Dark Chocolate Coconut Bars

Ingredients
- 1½ cups old fashioned oats
- 1 cup coconut flakes
- 2 cups all purpose flour
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup melted coconut oil
- 2 large eggs
- 1 Tbls. vanilla extract
- 1½ cups dark chocolate chunks
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan with non-stick spray or line with parchment paper.
- In a large mixing bowl or the bowl of a stand mixer, mix the oatmeal, flour, coconut, brown sugar, granulated sugar, baking soda, salt, coconut oil, eggs, and vanilla. Beat until the dough is moist and all the ingredients are combined. Stir in the chocolate chunks.
- Press the dough into the prepared baking dish. Transfer to the oven and bake 18-20 minutes or until the edges are set and the bars are golden. Let cool and cut into bars.
