Holiday Entertaining---Hot Spinach and Artichoke Bread Bowl

  • 1 (10-ounce) package frozen chopped spinach
  • 1 (14-ounce) can or jar artichoke hearts packed in water
  • 3 medium scallions
  • 2 cloves garlic
  • ¼ tsp. red pepper flakes
  • ½ cup mozzarella cheese, shredded
  • ⅓ cup Parmesan cheese, grated
  • 8 ounces cream cheese, cut into cubes
  • ¾ cup sour cream
  • ½ cup mayonnaise
  • 1 tsp. kosher salt, plus more as needed
  • ½ tsp. freshly ground black pepper
  • Italian or Sourdough, or French Boule' bread bowl
Instructions
  1. Preheat the oven to 425 degrees. Place a rack in the center of the oven.
  2. Carve out the center of the loaf to create a deep well, being careful not to pierce through the bottom. Cube the portion of the bread that was removed.
  3. Place the loaf and cubes onto a foil -lined sheet tray.
  4. Drizzle the inside well of bread and the cubes with olive oil. Season with salt and pepper.
  5. Bake for 10 to 12 minutes until crispy. Remove the cubes from the tray and set aside.
  6. Chop the spinach, artichokes, scallions.
  7. In a medium saucepan over medium heat, drizzle olive oil into the pan. Add chopped spinach, artichokes, scallions, garlic, and red pepper flakes. Stir until incorporated.
  8. Next, add mozzarella, Parmesan, cream cheese, sour cream, mayonnaise, and 1 tsp. each salt and pepper.
  9. Heat until melted and smooth, 8 to 10 minutes.
  10. Pour the melted spinach-artichoke dip into the well of the toasted bread loaf. Sprinkle with additional mozzarella cheese if desired.
  11. Return the loaf to the oven for an additional 7 to 10 minutes until bubbling.
  12. Serve immediately with toasted bread cubes.
