For the Brine:
2 quarts water
2 Tbls. kosher salt
¼ cup brown sugar
For the Chicken Rub:
2 Tbls. smoked paprika
2 Tbls. onion powder
2 Tbls. kosher salt
2 Tbls. light brown sugar, packed
1 Tbls. chili powder
1 Tbls. paprika
1 Tbls. cumin
1 tsp. garlic powder
1 tsp. cayenne pepper - (less if you're worried about the heat level)
1 tsp. dried mustard powder
½ tsp black pepper
4 lbs chicken wings, thawed completely if using a frozen bag
Instructions
To Brine Chicken Wings:
Combine the water, salt, and brown sugar in a large container. Add the chicken, cover and refrigerate at least 4 hours.
When you are ready to grill, preheat grill to Medium-high heat. Take chicken wings out of the brine, place on a cookie sheet and pat it dry on paper towels.
Next, place chicken in a large bowl and add half of the rub (you will have leftover rub). Toss wings to coat thoroughly.
When grill is preheated, grill wings, for 20 minutes, rotating every 5 minutes.
Serve with BBQ, blue cheese, ranch, or your favorite sauce.
