Super Bowl Food---Tonja's Table Favorite Grilled Wings

  • For the Brine:
  • 2 quarts water
  • 2 Tbls. kosher salt
  • ¼ cup brown sugar
  • For the Chicken Rub:
  • 2 Tbls. smoked paprika
  • 2 Tbls. onion powder
  • 2 Tbls. kosher salt
  • 2 Tbls. light brown sugar, packed
  • 1 Tbls. chili powder
  • 1 Tbls. paprika
  • 1 Tbls. cumin
  • 1 tsp. garlic powder
  • 1 tsp. cayenne pepper - (less if you're worried about the heat level)
  • 1 tsp. dried mustard powder
  • ½ tsp black pepper
  • 4 lbs chicken wings, thawed completely if using a frozen bag
Instructions
  1. To Brine Chicken Wings:
  2. Combine the water, salt, and brown sugar in a large container. Add the chicken, cover and refrigerate at least 4 hours.
  3. When you are ready to grill, preheat grill to Medium-high heat. Take chicken wings out of the brine, place on a cookie sheet and pat it dry on paper towels.
  4. Next, place chicken in a large bowl and add half of the rub (you will have leftover rub). Toss wings to coat thoroughly.
  5. When grill is preheated, grill wings, for 20 minutes, rotating every 5 minutes.
  6. Serve with BBQ, blue cheese, ranch, or your favorite sauce.
